I was hungry and in need of a quick meal. I looked through my fridge and found small Mi Rancho corn tortillas, Daiya cheddar slices, and Beyond Meat chicken. In the oven, I put down four tortillas and added a slice of cheese on each one. I sliced the chicken in to chunks then sprinkled it on top of the cheese and added another tortilla. I broiled it until the cheese melted then flipped them to get the cheese to close the tortillas together.
