Stuffed Peppers

This is a recipe from the 5-Day Detox that I adjusted and eventually made my own. This was the first recipe that I didn't follow exactly how she said and we ended up eating it for lunch the next day too. The portions for everything were too small to be filling for me so I just did what I wanted and my measurements aren't on point- I'm more of a go with what you want for things like this.

5 Day Detox

My sister and I decided to do Nikki Sharp's 5 Day Detox. Aaaand we really struggled with it. According to Nikki, she and others have found a lot of success with it but my sister and I didn't.

Overall we eat pretty well so we thought this would be easy and great. I turned into a horrible human- angry, hungry, and tired. I snapped at everyone and my patience was very low. Also my brain power was super low and I was spaced out constantly. Neither of us feel like we lost any weight (in fact we both think we might have gained some). And the food isn't that great which is why we ended up going rogue and eating only the dishes we liked (maybe that's why it didn't work?). For me, it wasn't enough food- I run around all day working with kids so I need more filling food versus something that moves through me quickly since I don't have time for long bathroom breaks. The food is so full of fiber and water that it flowed through me- 30mins after I ate I was starving again. My sister didn't have the hunger problem but she didn't feel good on it. 

I can't imagine we did something wrong since we followed it pretty well in the beginning. We still have one day left and I have lost all faith in it. Maybe if we didn't have such hectic busy lives it would be a lot better.

I will say that she had some interesting recipes that I will and have tweaked to suit me better. I definitely want to get more creative with my food and this detox and the movie Chef have really inspired me. 

Fruit Leather

Fruit leather is the reason I wanted a dehydrator in the first place. I made two trays of cherry plum. And boy o boy were they great! It takes 4-7 hours at 135F

Dehydrated Zucchini

I thought zucchini would be a great on the go snack... I was wrong. I'm not big on seasoning but I really need to experiment with some on these bad boys because they were kind of gross.

125F for 3-5 hours 

Dehydrated Fruit!

So I used all of the racks to make some dehydrated fruit and boy was that a bad idea! It took SO long and some fruits took much longer than they should have. It was a lot of trial and error but it made my house smell really yummy. Each fruit had a different dry time so it took forever for them to finally be ready.

I used Plums, Peaches, Apples, Mango, Cherries, and Raspberries. All of them are pretty good. The only ones that were weird were the raspberries- they became sour and had a weird texture.

I set it for 135F and I had it running for about 10-12 hours. They also continued to lose moisture when the dehydrator was turned off. Give it about an hour or so.

Kale Chips!

I made kale chips in the dehydrator! I put them in at 125F for 3-3.5 hours. When they were done I put some Redmond's Salt and Cayenne pepper in the bag and shook it. Next time I will add seasoning to it before I dehydrate. I also want to try to make "cheesy" ones.

Dehydrated Mushroom

Ok so this sounds weird but I love the dehydrated shitakii mushrooms in my miso soup so I thought "hmm I wonder what creminis taste like." Well, it was amazing! Such a good choice! I scarfed them down so fast. I also dipped them in this really yummy pesto that my sister got from whole foods. It was such a perfect combo. Yum!

I put them at 125F for two hours and they were perfect 

Dehydrated Bananas

The first thing I made with my new dehydrator was bananas. They turned out to be not bad but not amazing. I think next time I will make the slices thicker so they are a little softer. The size I made them they turned out to be pretty flat so it was like a stale chip but I still ate the whole batch in one go.

Slice them and dehydrate them at 135F for 5-7hrs.


I finally got a dehydrator!! It was my birthday present to myself.  I bought the Presto 06301 Dehydro Digital Electric Food Dehydrator from Amazon with an extra set of Mesh Screens. Oh wow I am in love! I used it every day for the first week! I have jars and jars of dehydrated fruits and veggies. This model is great because it turns off when the allotted time is up and it comes with 2 mesh screens and 2 fruit leather trays. The only downside is the sound it makes. The reviewers aren't kidding- it's noisy. But I got used to it and it basically became white noise to me. Also, if you set it at night you wont hear it because you are sleeping.

I am very happy with my purchase. I have wanted one for a very long time and this one really delivers on everything I wanted.
