Cauliflower-Leek soup

Since this summer is my "Summer to try new foods," Leeks were next on my list. My aunt said she likes potato-leek soup but this lady at Trader Joe's said to use cauliflower instead of potatoes to make it healthier. So I did:


1 Head of Cauliflower 
2 Leeks
Vegan butter

Steam the cauliflower until it is mushy. While it is steaming, cut the leeks in half lengthwise and soak in ice cold water (to clean them). When the cauliflower is ready, put it in the blender and puree (word of advice let it cool a bit if you don't have a heat resistant blender). While you are pureeing the cauliflower put the leeks in the same steam pot for a bit to soften. Add butter to taste. Blend the leeks with the cauliflower puree. Add liquid from the bottom of the steamer to make it smoother. Enjoy!
