Brown Rice and Zucchini Pasta

I am obsessed with our spiralizer. So the other day when I was craving pasta (I didn't want to go full-on carb with all brown rice pasta), I used the spiralizer to make zucchini noodles. I also made a variation of a tomato sauce (I have never made the same one twice).

Cauliflower-Leek soup

Since this summer is my "Summer to try new foods," Leeks were next on my list. My aunt said she likes potato-leek soup but this lady at Trader Joe's said to use cauliflower instead of potatoes to make it healthier. So I did:

As you know, I love all things glass! Lifefactory has a great selection of glass water bottles in various colors, sizes, and top styles. I have one in every size (minus the small baby bottle) and I use them almost everyday. They just recently came out with glassware and wine glasses that are made for travel and picnics.

Chocolate #2 and #3

I have become super obsessed with making raw, vegan chocolate! My second and third round of chocolate i did not add any extra superfoods. They were simply made with coconut butter, coconut oil, cacao, coconut sugar, and maple syrup (follow the quantities from the previous post). 

For the second round, I made cashew butter sticks and plain chocolate sticks. 
For the third round, I made crushed raw almond chocolate sticks, fig and chocolate sticks, and salted chocolate sticks as well as plain chocolate sticks (for those who don't like fancy flavors).

Summertime Popsicles- Round 1

I am such a fruit addict! I know that eating a lot of fruit isn't good for you but I love it so i dont really care. I would rather eat a peach than candy so i think i am making wise life choices. 

Okay now that that is out of the way... One of my favorite things to do is make popsicles (ice lollies) in the summer and they are super easy and fast(ish). My first flavors were Mango (pic 1) and Mango-Watermelon (pic 2). Both flavors were delicious. I will keep updating with new flavors throughout summer. 

For the mango: blend freshly cut mango and a bit of water till smooth. 
For the mango-watermelon: 1. blend cut watermelon until it becomes juice, 2. cut up a fresh mango and add it to the blender, 3. add watermelon juice instead of water, 4. blend until smooth.

-Add to your molds and freeze for a few hours (3-4 at the very least).
-Enjoy! 

Tabbouleh

I wanted to be super culturally appropriate and make one of my favorite Lebanese dishes: Tabbouleh. It usually has cracked wheat in it but since I am trying my hardest to avoid anything wheat/gluten-y i decided to try it with cauliflower instead. I couldn't taste a difference so i am super proud of myself. I went a little rogue with it and added things to it.

Raw Superfood Chocolate

Last night i was craving chocolate so i made amazing raw, refined sugar free chocolates. 
you need: 
1/2 cup coconut butter
1/2 cup cacao powder
1 tablespoon Maca powder
1 tablespoon coconut sugar
2 tablespoons maple syrup 
1/4 cup coconut oil

On low heat melt/mix Coconut butter and coconut oil. Mix in cacao powder till blended. add coconut sugar, maca, and maple syrup till combined. MAKE SURE TO WATCH IT BECAUSE IT WILL GET WEIRD ON THE HEAT. turn off the heat when everything is melted. 
place in molds and refrigerate. Enjoy! 


Vegan Jello Shots

I wanted to practice making jello shots for the fourth of july and i had an opportunity to do them for a party. I used Agar Agar instead of gelatin. For every cup of liquid you use 1 tablespoon of agar agar. 

 to make different layers, i cut up and blended fresh fruits- such as mango, strawberries, limes, watermelon. It was an interesting experiemnet to see what fruits still taste good after heating and what doesnt (watermelon is gross when heated). I made the gel by heating up the fruit with water and adding the agar agar, let it cool a bit, then add vodka. Agar Agar solidifies at room temp which was great because they solidified pretty quickly in the fridge and i could add layers super fast. Unfortunately, the fruit ones ended up being gross. It was a struggle to eat them. I also made coconut cream ones because i thought the color contrast would be neat. Also gross.

The ones that were a hit were the Bloody Mary celery sticks! i used fresh tomatoes instead of juice, horseradish, tabasco, garlic and onion powder, a vegan Worcestershire sauce, lemon juice, salt and pepper. Heat up the tomatoes and add the agar agar. when it is all mixed, turn off the heat, add everything else. let cool then add the vodka. Clean and cut the celery, put them in a glass pan so they are held in place by the sides. spoon the gel mix on the celery and let solidify in the fridge. Enjoy! they are spicy and delish!

It was a great experiment and i will be making the Bloody Mary ones for the 4th but probably not the fruit ones.

Raw Strawberry Chia jam and Raw "Nutella"

I tested out some yummy foods that i knew i could take on the go or eat as a snack. The easiest was the chia jam- blend fresh strawberries and add a teaspoon of chia. some water may be needed if the berries aren't juicy enough. put in the fridge so the seeds can absorb the liquid and become gelatinous. 

The cashew butter is quite simple as well- blend dry raw cashews may add salt or not ( i dont). 

The raw nutella was hard and didn't turn out as creamy as i had wanted (i probably should have soaked the hazelnuts). Mix hazelnuts, cacao nibs, maple syrup, and coconut oil. Blend.

Eco Shave


I have been making my own beauty products and trying to find the most eco ways to care for my body so i researched eco shaving and everyone said to buy a safety razor. they last forever (little waste) and the replacement blades are around $6.00 for 10. I have been using it for a week now and i really like it. Take your time with it because it is sharp and will easily cut you. I bought the Merkur razor on amazon along with a 10-pack of blades. 

Java Chip Fakuccino

I wanted a frappuccino but i dont actually know what is in one so i made my own with gf/v ingredients. I wanted a Java chip one so i added chocolate chips but add what you want to make whatever flavor you are craving. 
it requires: 
cacao nibs
coconut sugar
cacao power
coffee (i like Papua coffee it's non-acidic and its easy on your stomach)
ice
ice cream (i used So Delicious in chocolate and mocha almond fudge)
Salt
Chocolate Chips (optional)
the amounts vary depending on how big of a cup you want and what flavor profile you are going for. its pretty easy and you'll be happy to know what is going into your drink. Blend all together, freeze for a bit, and enjoy.

Berry Chocolate Tart

This is one of my favorite food creations and it is super easy! I want to try to make it fully raw but the pie crust was SO good and flaky. i made a Bob's Red Mill pie crust according to the directions (remember frozen butter is your BFF). when that was ready, i thinly sliced strawberries and layered the bottom with them. I mixed coconut cream, coconut sugar, and cacao. Pour on top of the strawberries and top with raspberries. Delish! 

Dirt

Back to my sugar addiction! One of my friends posted worms and dirt that she had for her birthday and i wanted it SO badly so i gf/v-ized it. I crushed up the glutino "oreos" and placed them at the bottom of a bowl. I mixed coconut cream, cocoa, maple syrup, coconut sugar, and crushed cookies. I put it in the bowl. topped with more crushed cookies. I let it sit for a bit in the fridge and enjoyed. It was great! 

Strawberry Superfood Heart Mini-Pies

I made these for Pi day! They are cute little handheld heart pies. I used Red Mill pie mix, cookie cutter hearts and i made a strawberry superfood filling. The filling was fresh strawberries, flax, maca, chia, and goji. I blended it all together and added it to the first layer of pie crust. I added the second layer of crust and baked it according to the package directions. Check on them often because they spill out. When they were baked, i drizzled cacao and coconut oil on top. 

Vegan Scallops

I see a lot of vegan chefs making vegan scallops using king oyster mushrooms. I tried it and i hated it. I cut up the stems, soaked them in a seaweed/kelp mix to try to give it a seafood taste. Then i grilled them. Gross. not going to do that again. 

Beyond Meat Chicken "wings style"

I love Buffalo Wings! Spicy is my favorite and the mix of Frank's Red Hot and Butter (Earth Balance) is like a creamy hot sauce. Using Beyond Meat Chicken i make the buffalo wing sauce- Franks and butter- then add the strips and let them boil till the chicken has absorbed enough sauce. Put it in a dish and serve with Follow Your Heart Vegan Ranch.

I also made BBQ strips by doing the same thing but with BBQ sauce.

Pancakes

Another Cherrybrook Kitchen favorite is chocolate chip pancakes! these are easy to make and taste so good! Just follow the box and you are golden. For Syrup i used Trader Joes Grade B Maple Syrup, goji and cacao powder and Earth Balance butter spread. such a fan and one box lasts a long time. I've already made pancakes three times with just one box. 

Egg Alternatives

Vegan Pot Pie

I was craving a veggie pie but couldnt find a gf/v one in the store so i made one. I used Bob's Red Mill pie crust, Califia Farms almond milk, and various veggies i could find.
I made the pie crust according to the directions- always have some of your butter frozen it makes for a flakier crust. Cook the crust until golden.  I cooked the veggies- carrots, potatoes, zucchini, mushrooms, and onions. Then i poured the veggies into the pie and added enough almond milk to cover the veggies. I placed the left over crust dough on top and baked according to the package pie directions. When it was ready i let it sit for a bit before i dug in. The night i made it, the filling spilled out of the pie when i ate it but the next day it had set in the fridge and was a perfect hand-holding pie. 

Kiwi Berries and Cherimoya

This spring/summer my goal is to try as many new fruits as i can. Kiwi Berries have to be my favorite so far! they are basically little kiwis and they taste as such. Cherimoya was super sweet. Like candy custard. I liked it. I also tried gooseberries (cant seem to find the picture of them but they are orange round berries in this interesting leaf-like shell). The gooseberries did not taste the why i thought they would taste. They were sort of sweet, a bit bitter, and a little sour. I want to make a tart with them i think they would taste better that way. 

Pupusas

I found these Tres Latin Foods pupusas at whole foods. I was very excited to try these because i love pupusas but i can never find vegan ones. These ones were great! they are easy and quick to make and taste so good.

Beyond Meat Tacos

I LOVE tacos! seriously i could eat them all the time forever! corn tortillas are the best things in the world and you can fill them with anything! I love Beyond Meat chicken. I hate the taste of real chicken but fake chicken is perfection. For the tacos i cooked rice with tomatoes, grilled mushrooms and beyond meat chicken, and toasted the tortillas. I stuffed the tacos and added BBQ sauce or chili sauce, lettuce, tomatoes, and avocados. 

Veggie Pasta

Trader Joe's has a lot of great vegan meal options. One thing i like (when i need something quick) is their pasta sauce. It's GF/V and tastes pretty good. I sauteed mushrooms and zucchini with coconut oil. I added tomatoes and let it simmer while i cooked the brown rice and quinoa pasta. When it was ready, i combined the tomato sauce, veggies, and pasta in a pan and cooked them together. Voila! easy quick dinner. 

Detox Water

I found this detox water on instagram. it is so delicious and easy: cucumbers, lemons, mint. let sit over night and enjoy. it really helps with skin and internal. 

Cousa

Another recipe i tried with the Beyond Meat Beef was Cousa. Cousa is a Lebanese dish with various veggies stuffed with a rice/meat combo. I mixed cooked rice and the Beyond Meat beef in a bowl. I cored yellow squash, zucchini, and peppers for stuffing. I boiled some cabbage to make cabbage rolls. I stuffed everything with the "beef" rice mixture. In a pot, put tomato sauce and the stuffed squashes. Let them boil for 45 mins or until tender. In a glass pan, put the cabbage rolls and peppers. Add water, lemon juice, and preferred spices just to cover the bottom by a few centimeters. Cover with foil and bake in the oven at 350f until tender.

Gazpacho

It was a hot day and night so i wanted to make something yummy and cold for dinner. I had never made gazpacho before and i didnt want to use any online recipe so i grabbed most of the veggies in my fridge and experimented. 
I blended: peppers, tomatoes, cucumbers, carrots, avocado, ice, spinach, cayenne pepper, and a bit of mineral salt. (the picture has a coconut in it but i didnt add any i was just drinking it while cooking)
I cooked some rice pasta and added it after everything had been blended. 
It was great! I had it the next day for lunch and it kept well in the fridge.

Raw Desserts from Instagram

Two instagram accounts that i love posted these amazing raw desserts that i ended up making for Valentine's Day. 

The second was Cheese Cake by PlantStrongVegan For this one i tripled the recipe and used a full pie pan instead of small containers. Then i added fresh fruit to the top. 

they were both big hits! and i have make the bars a few mores times (i'm obsessed). 

Enchiladas

Another recipe i made with the Beyond Meat beef was enchiladas. I mixed spinach, Beyond Meat beef, peas, corn, and mushrooms in a sauce pan till heated. I stuffed the corn tortillas and placed them in a glass pan. I poured one container of chopped tomatoes with liquid on top of the stuffed tortillas and added Daiya cheese to the top. I baked it on 400F for roughly 60mins. 

Cashew Milk and Pudding

Making Cashew Milk is the same as any nut milk- soak over night, one cup nuts to two cups water (or less depending on how thick you want it), add salt, cacao, coconut sugar, maple syrup, turmeric, etc whatever you want to add/make with it. 

With almond milk you can dry the leftover pulp and make almond flour. Cashew is much creamier and the left over pulp is more like a pudding or thick cream so i decided to make chocolate superfood pudding. In my bullet, i put the left overs from the cashew milk, cacao, flax, coconut sugar, and goji. I blended it and added chia to the bowl. Stir and refrigerate over night so the chias absorb the liquid and make it more gelatinous. It ended up being quite good.

Fruit Salad Breakfast

I added coconut sugar, chia seeds, and hemp seeds to a fruit salad which i ate along with a green smoothie for breakfast. My smoothies are always different but i pretty consistently add bananas, spinach, Maca, Chia, Cacao, hemp, nut milk, Spirulina, and coconut sugar. The rest is any fruit or veggie i can find in the fridge. 

Dinner: Chilli and a Sandwich

One of the recipes i made with the Beyond Meat beef was a veggie chilli. I chopped and sauteed onions, zucchini, and mushrooms then added the "beef". I added cayenne pepper to taste. I ate it with a sandwich that had Beyond Meat Chicken and veggies.

Vegan Chicken

Sol Cuisine came out with this Tangy Korean BBQ chicken and it was really good! i ate it with Kimchi and rice. the sauce is great and the meatless chicken tasted really good.

Beyond Meat Beef Crumble

Beyond Meat's newest creation is actually quite good! i have made a variety of dishes with it and have all been delicious. My mom even said that if she could eat this she would cut down on her meat consumption! (score!).

Bread

This was my second attempt at making GF/V bread. I used the Red Mill bread mix, Orgran no egg, apple cider vinegar, homemade almond milk, and coconut oil. I followed the mixing instructions on the package and cooked it in a bread maker. It turned out lumpy looking but tasted great! My first time i used banana instead of milk (ya seriously that was all i had) and it tasted fairly good. it had this weird hint of banana that wasn't as strong and nice as banana bread but it was still good and i ate it all the time.

Cauliflower Pizza

I attempted cauliflower pizza! It was good not great and it fell apart while eating it so i'm guessing i didnt do it right (i needed a better binder). I used flax instead of 2 eggs, use pretty much a whole head of cauliflower, and a cup of raw almond flower. I added pink salt and cayenne pepper to taste. Put it on a baking sheet and bake until lightly brown at 350F. Take it out and dress it as you would any pizza. I used tomato paste and garlic paste to make the sauce, i added mushrooms, Beyond Meat chicken, spinach and Daiya cheese. Then put it back into the oven until it is cooked to your preference. photos after the jump.

Cupcakes

I love sweets. I try so hard to break my refined sugar addiction but it's hard. I have been working on making everything using maple syrup and/or coconut sugar but i haven't gotten there with cupcakes. I love the Cherrybrook Kitchen box mixes especially for chocolate cupcakes. I make a whole box and freeze them so i always have something when i crave it. (i havent made these in a few months since i have been doing pretty well with the raw chocolates i am working on)

Asian Style Wraps

I found rice paper circles in my local health food store and wanted to try to make veggie wraps using the rice paper and seaweed. i steamed carrots, green beans, asparagus, and zucchini. I grilled mushrooms, onions, and tofu hot dogs. And lastly, i cut up some cucumbers, avocados, and green bell peppers. 

I had such a hard time rolling the rice papers. i have no idea how people do them so well! i put down rice on both the rice paper and seaweed then various veggies and rolled them up. I added chili oil to some as well as nutritional yeast. they looked awful but tasted great! pictures after the jump.
