Chia Pod

I found this amazing thing in the yogurt section of Whole Foods: 

If you don't mind the sliminess of activated chia and the taste of coconut mixed with various fruits then this stuff is for you! I absolutely loved it! Chia seeds are one of my favorite super foods they have fiber, omega3s, calcium and so much more! This pack is so convenient and it comes with it's own little spoon. 


This year we really made an effort to have great gf/v options. Last year we ate cheese and wheat but this year we really wanted to stick to our guns and we were pretty successful at each meal. We cooked Christmas Eve dinner so one of the lasagnas was gf/v (I was the only one who ended up liking it) and I made amazing roast veg. We had "sausage" and peppers that my mom made specifically for the vegans and a salad. 

Roast Veg:
Brussels Sprouts 
Dried basil 
Fresh Rosemary 
Fesh Thyme 
Olive Oil (Coconut Oil is better and should be used instead!) 

Add the herbs to the olive oil so it sits for an hour or so. 
Preheat the oven to 400F 
Chop the veggies to smaller manageable sizes then toss with the olive oil and herbs.
Put in a pan then in the oven for an hour stiring occasionally. I didn't want the veggies to be soft and mushy so I took them out while they were still sturdy but cooked.

I don't have the info for the lasagna but we made bechamel sauce with rice flour and soy milk. My uncle (an amazing chef) made the vegan "meat" sauce and we used sturdy brown rice noodles. Daiya cheese and vegan Parmesan for the cheese layers.

For Christmas Day, my aunt and uncle made a huge amazing spread of food full of veggies. We had Brussels sprouts, carrots and other root veggies, mashed potatoes, and salad. I had a little bit of stuffing because my aunt made it vegan just for me (it wasn't gf that's why I only had a little).

Sorry I have neglected my blog! I didn't really post anything from my Euro trip then I got super busy when I got home. I will post as much as I can about the last month or so :)

My sister's flat has two markets Tescos (the one that had all the horse meat when it said beef) and Waitrose. I love waitrose it's more high end than Tesco but their prepared/packaged foods are SO good and they have some good vegan stuff. Sadly their alt meat has eggs in it. Here are some things I really liked (it's all Mediterranean food):

I also found gf/wf wraps that are really good! They have a gf section but it's really small and not that exciting.
