Chia Pod

I found this amazing thing in the yogurt section of Whole Foods: 


If you don't mind the sliminess of activated chia and the taste of coconut mixed with various fruits then this stuff is for you! I absolutely loved it! Chia seeds are one of my favorite super foods they have fiber, omega3s, calcium and so much more! This pack is so convenient and it comes with it's own little spoon. 

Christmas!

This year we really made an effort to have great gf/v options. Last year we ate cheese and wheat but this year we really wanted to stick to our guns and we were pretty successful at each meal. We cooked Christmas Eve dinner so one of the lasagnas was gf/v (I was the only one who ended up liking it) and I made amazing roast veg. We had "sausage" and peppers that my mom made specifically for the vegans and a salad. 

Roast Veg:
Carrots
Potatoes
Brussels Sprouts 
Mushrooms 
Dried basil 
Fresh Rosemary 
Fesh Thyme 
Olive Oil (Coconut Oil is better and should be used instead!) 

Add the herbs to the olive oil so it sits for an hour or so. 
Preheat the oven to 400F 
Chop the veggies to smaller manageable sizes then toss with the olive oil and herbs.
Put in a pan then in the oven for an hour stiring occasionally. I didn't want the veggies to be soft and mushy so I took them out while they were still sturdy but cooked.

I don't have the info for the lasagna but we made bechamel sauce with rice flour and soy milk. My uncle (an amazing chef) made the vegan "meat" sauce and we used sturdy brown rice noodles. Daiya cheese and vegan Parmesan for the cheese layers.

For Christmas Day, my aunt and uncle made a huge amazing spread of food full of veggies. We had Brussels sprouts, carrots and other root veggies, mashed potatoes, and salad. I had a little bit of stuffing because my aunt made it vegan just for me (it wasn't gf that's why I only had a little).

Waitrose

My sister's flat has two markets Tescos (the one that had all the horse meat when it said beef) and Waitrose. I love waitrose it's more high end than Tesco but their prepared/packaged foods are SO good and they have some good vegan stuff. Sadly their alt meat has eggs in it. Here are some things I really liked (it's all Mediterranean food):


I also found gf/wf wraps that are really good! They have a gf section but it's really small and not that exciting.

Wagamamas

Wagamamas aka the best damn food in London. I know that sounds crazy but my sister and I crave this so hard all the time. It has been the first dinner I have with my sister each time I visit her (hmm maybe it's a tradition now). If you ask for vegan they give you vegan ;) unfortunately it was not gf/wf it has soba noodles. They do something to the tofu (maybe deep fry?) that makes it so perfect and it absorbs the broth holy moly yum! Add some chili oil and chili powder and you are good to go!

Brussels Sprouts and Mushrooms

I'm so proud of how amazingly the dinner I made tonight turned out! I'm leaving in two days for Europe so I didn't want to get all the usual produce I get from the market so I bought this cool bag of little Brussels and sliced mushrooms. I melted coconut oil in a large pan, added the liquid from a jar of salsa because I didn't have any tomato paste, I chopped four tomatoes and let it all summer for a bit. I added chopped black olives, the bag of sprouts, and chopped green cabbage. Later I added in the mushrooms and let it all meld together while I cooked wild rice (it took like 45mins!) and red quinoa. It was amazing!

Gluten Summit Fail

so i have failed you all! i got really bored listening to lectures every night after work and also really busy getting ready for my Euro vacation (get excited for amazing vegan posts from England, Poland, Paris, and Wales!). i have three or four lectures on my phone and i will post info from them hopefully this week if i have the time.

sorry life got in the way but the take away was Gluten=Devil Dairy=Sibling of Devil and soy and corn are bad too. humph all the good stuff right?!?

Hail Merry at Costco

Holy moly happiness! I called them and they had no idea what I was talking about. I took a risk and went to Costco anyway and I found them! Mini treats of heaven yum! 


Mac and Cheese

I was craving Mac and cheese (like the blue box kind) but the boxes are not gf/v so I made my own :) 

I used: daiya cheddar cheese, rice milk and earth balance for the sauce and organic gf corn pasta. 

It turned out amazing!!!

Onion Mushroom Rice Noodles with Cranberry Sauce

It is that magical cranberry sauce time of the year. So all I can think about is what I can add cranberries to. One night I came up with the idea to mix cranberry sauce with rice noodles, mushrooms, and onions. Truth be told it was kind of weird. Not exactly what I thought it would taste like and I probably wouldn't make it again. But the cranberry sauce was good on it's own :)

Surf Sweets

Ok you know my love for this brand and it continues with these delish peach rings! The gluten summit this week has reminded me about the devilish charms of sugar (it's really bad for you {duh} but I love it so much) so I felt guilty eating these until it touched my tongue and I forgot about how bad sugar is and remembered why it's so good!

Avocado Rice Noodles

I forgot about this interesting dish I make using avocado, nutritional yeast (nute) and rice noodles:

Smash up the avocado like you are making guacamole, put the cooked noodles on top, add some nute, and stir:

Midnight Snack

I am a big fan of frozen fruit (especially berries). Trader Joes has a mixed berry bag with cherries. It's really good! I eat them pretty much frozen but they start to thaw as I am eating them. Tonight I added a quarter of a Hail Merry miracle tart (another obsession). Yum ;)

Rescue Chocolate

I was really looking forward to trying the Rescue Chocolate bar because it was peanut butter flavor but it ended up being weird and kind of gross. Major sadface especially since they are for a good cause! The chocolate was weird and waxy. There was barely a peanut butter taste it was sort of hollow bit crunchy inside but all I could taste was the off chocolate. Unfortunately I do not recommend this because I am going to assume that the chocolate will taste the same on all of their products and it was really bad. 


YumEarth Fruit Snacks

I had the YumEarth fruit snacks last night and they were really good! I was excited for the banana because I love banana everything but it ended up being my least favorite of the flavors. The gummies had a bit of a hard outside and a soft inside which was perfect. I definitely recommend these :)

Happy World Vegan Day!

November 1 is World Vegan day! I happily enjoyed yummy leftovers from Halloween dinner. My mom had Tennessee BBQ for our party so I used some of their sauce and made BBQ Beyond Meat strips for me and my veggie relatives. We also had this yummy eggplant veggie stuff and rice:

YumEarth Naturals Sour Beans

Oh man I may have found my new obsession! Damn that these are gf/v bc I now want to consume these all day and all of the night! V/GF sour sweets usually aren't sour. I'm not kidding... One of my most beloved brands has sour items and they aren't sour to me at all so I was shocked at how insanely sour these were. Obvi shocked in a happy excited way. I'm sad that I already ate these and they no longer exist and I have none to eat right now.

This is what the little beans of sour heaven looked like... So cute like those dinosaur egg candies from my youth. 

Crunchmaster Crackers

These crackers from the VeganCuts snack box were really good! I'm not a big cracker person. I would rather snack on fruit, candy, seaweed, or nuts but today I was running around for work and these were a perfect snack! The salty and crunch and flavor were all amazing. I definitely recommend these :) yum good choice VC! 

Coconut!

I love whole fresh coconuts. They are a pain to open so I had fun with it.

Vegan Protein

"Chicken" & Rice Soup

I made this really yummy V/GF "chicken" and rice soup! I am crazy obsessed with Beyond Meat chicken-free strips. I go through a pack so fast! I didn't really like chicken before I went vegan but these things are crazy good. I made soup using carrots, celery, and rice. I cut up the strips and added it to the soup. I finished it off with siracha and nutritional yeast. YUM :)

Bootleg Veggie Soup

When I got home from babysitting tonight I was SO hungry so I looked in the fridge to make a veggie stir fry (duh that's all I eat) but the housekeeper came today which means all my veggies have magically disappeared into some weird meat-containing concoction for my mom which she will eat for one meal, freeze, attempt to eat it one week-two months later only to toss it out bc it didn't freeze well. So I found what I could and made a soup. I found pre-chopped mushrooms and carrots (stuff I would never buy myself bc who knows what they used to clean or preserve them or if they even did  that), kale (yay and mine I bought Sunday), rice, barley, lemons, and our amazing selection of spices. Mix it all together and get: 
I'm about to eat it right now I hope pray wish it will taste good.

Daiya Pizza

Daiya makes gf/v pizzas but I have never seen them in stores until I went to this amazing Whole Foods in Glendale! I got the mushroom and roasted garlic one. It was good but the mushrooms were a little weird. I would definitely buy this again but in one of the other flavors.

Whole Foods Haul

I went to Whole Foods for the first time in a few months and i went a little crazy! For real solid foods I got yummy fries, miracle noodles (made from a yam or something i forgot how much i liked them and its a better alt to rice noodles), daiya pizza, and amy's enchiladas (my all time fav food). Desserts i got a young coconut (drinking the milk out of a straw i feel like im on vacation), hail merry miracle tarts in chocolate, sweet and sara marshmellows in cinnamon pecan, and chocolate peanut butter soy ice cream. And to top it all off i replenished my superfoods!



Protein supplement

I got this sample packet in a vegan cuts box. Unfortunately it was disgusting. I mixed it with rice milk and the powder never dissolved so it was like drinking a cup of sand and the flavor wasn't good either. I can't even describe the flavor it was so off and weird. It might be the coffee flavor that made it weird but it was an awful breakfast. I don't know if it would have been good in a shake or smoothie maybe with some cacao to make it like a chocolate coffee shake but it was rough solo. 


Palm Oil

Palm Oil is just the worst because getting it requires deforestation of rainforests and the death  of wild orangutans. There is a group of people who are trying to stop the production of Conflict Palm Oil ---> inyourpalm.org it is so easy to help! you take a picture of your palm saying #inyourpalm and submit it. It is for a great cause! we don't want wild orangutans to become extinct do we??

Last Night's Late Night Munchies

Another post about my exciting late night snacks. Last night I went to a music Monday show and didn't get back till about 1:30ish and I was hungry so I made rice sprinkled with nutritional yeast and a fruit smoothie. I really wanted Asian-esq rice and the nute gave me the texture I was looking for on the rice and the smoothie fulfilled my late night sweet tooth. Yumm


Meatless Jerky take 2

Ok so I tried this meatless jerky again because last night I realized that the first flavor I tried (pepperoni) actually in fact tasted like pepperoni but I haven't had pepperoni in years so I didn't immediately get it. I tried the teriyaki flavor and it was actually pretty good. 


Surf Sweets

Yum I love surf sweets! All of their gummies are so good and totally hit the spot for gummy candies that are vegan and gf :)

Out of Town Breakfast

Continuing with being out of town my grandma was beside herself over what to feed me bc I have so many restrictions. She bought Udi's gf bagels (so thoughtful but I never eat bagels) and fruit (which I ended up bringing home). It sounds like a failure but actually I did eat half of one bagel and I had my trusty passion fruit :)

Travel Food

Last night I went to visit my grandma. I left right from work so I had to make something that would be my lunch and dinner bc the drive was about 2.5 hours and i had work before.
So I made this:
I steamed all the veggies I had because I was afraid they would go bad overnight. Seriously. I thought everything in my drawer in the fridge would instantly rot bc I was going to be out of town for one night. 

It was good though and the artichokes made a good midnight snack. (My grandma surprisingly had Earth Balance so I even had a "butter" dip for them)
